If you don’t have a wire rack, use a tinfoil-lined baking tray brushed with some vegetable oil to prevent sticking.

Grate the Orange (1) into a small bowl.

Mix in the Freshly Ground Black Pepper (1/4 tsp), {@12:}, Onion Powder (1 tsp), Dried Chives (1 tsp), Crushed Red Pepper Flakes (1 tsp), {@10:}, Dried Thyme (1 tsp), Hot Smoked Paprika (1 tsp), Ground Nutmeg (1/2 tsp), Ground Ginger (1/2 tsp), Ground Cinnamon (1/2 tsp), Ground Allspice (1/2 tsp), and {@11:} to form a moist rub.

Now go ahead and rub the Chicken Drumsticks (4 lb) with the rub, cover and place in the fridge to marinate for about 4 hours.

Once the chicken has marinated, preheat your oven to 400 degrees F (205 degrees C).

Remove the seasoned chicken from the fridge and allow it to come back to room temperature. Use a wire rack on a baking sheet to roast- this will allow for the hot air to circulate around the chicken pieces and cook evenly. Try to place them in a single layer and with a bit of space between each.

Place the drumsticks in the preheated oven and on the middle rack of the oven and bake for 1 hour. This time may vary depending on the size of your drumsticks.
