Best cooked in a silicone pan!
Swap in your favorite veggies: Try spinach, broccoli, mushrooms, or zucchini to suit your taste or what’s on hand.
Add extra flavor: Mix in fresh herbs, a pinch of chili flakes, or your favorite shredded cheese.
Make it easier: Prep the veggies ahead or use frozen chopped veggies to save time.

Preheat oven: Set to 375 degrees F (190 degrees C). Lightly grease a 12-cup muffin tin with Nonstick Cooking Spray (as needed).

Divide the chopped Kale (1 cup), Red Bell Pepper (1/2 cup), Scallions (4 Tbsp) and Shredded Mozzarella Cheese (1/2 cup) evenly among the muffin cups.

Pour Eggland's Best Liquid Egg Whites (3 cups) over the veggies, filling each cup about three-quarters full. Season with Kosher Salt (1/2 tsp) and Simply Organic Black Pepper, Medium Grind (1/4 tsp).

Bake for 18–20 minutes, or until the egg bites are set and lightly golden on top.
