Cooking Instructions

HIDE IMAGES
Step 1
Measure and pour Buttermilk (2 cup) into blender or food processor. Slice and add Gorgonzola Cheese (8 ounce) and Cayenne Pepper (1 pinch). Blend.
Step 2
Pour mixture over the top of the Chicken Wing (8). Cover and place in the refrigerator for at least 30 minutes and up to overnight.
Step 3
Pour enough Canola Oil (as needed) into a deep sided pan for frying. Using a candy or frying thermometer bring oil up to 335 degrees F (168 degrees C).
Step 4
Pull wings from marinade and set on a raised rack. Allow to come up to room temperature. Sift all purpose All-Purpose Flour (to taste) lightly over both sides of the wings.
Step 5
When oil has reaches 335 degrees F (168 degrees C), quickly start adding your wings. Lower the wings in slowly one at a time and no more than three wings in the pot at once. This will help to keep the temperature from dropping too drastically.
Step 6
Remove the chicken wings when they are mahogany in color. About 7 minutes. Set on raised cooling rack. Sprinkle with Sea Salt (to taste) while hot.
Step 7
Serve with blue Blue Cheese Dressing (to taste) and or your favorite Buffalo Sauce (to taste). Or just a good ol' squeeze of lime!
