In a large pot add enough
Olive Oil (as needed)
to cover the bottom and add in the
Garlic (4 cloves)
over medium-low heat. Once the onions start becoming translucent add in the
Yellow Bell Pepper (1)
Once the bell pepper begins to soften up, add in the
Pork Ribs (1.8 lb)
. Continue to cook slowly so the meat is tender once the dish is done.
Next, add in
Hot Paprika (1 tsp)
and stir for a few seconds. Then, add in the
Tomato Sauce (1 1/4 cups)
and continue to stir.
Add in the
Potatoes (3.3 lb)
. Proceed to season with
Salt (to taste)
and stir. Then, add in enough
Water (to taste)
so that the potatoes are submerged completely. Raise the heat to reach a rolling boil and once reached, bring back down to medium heat. Continue to cook on medium heat for 45 minutes.
If you see that the stew does not thicken up, then once the potatoes are fully cooked mash them and place back into the stew. Once the potatoes are cooked turn off the heat and remove the pot. Let it rest for 10 minutes with the lid on.
Once rested you are ready to serve and enjoy!
