Cook Quinoa (1/3 cup) according to package directions. Once cooked, fluff with a fork and set aside.
Heat around Oil (1 tablespoon) in a wok. Add Celery (2 stalk), sauté it on high for a minute.
After that add slices of Onion (1/2), sauté it. Don't let it cook too much maintain the crunchiness of vegetables. Add Green Chili Pepper (3) and Assorted Color Bell Peppers (2), you can use whatever color peppers you have in hand. Sauté all of them on high maintaining the crunchiness.
Add around Frozen Corn (1/2 cup) and stir. Add Black Beans (1/4 cup) and Red Kidney Beans (1/4 cup). Give a good stir.
Add the Lemon Pepper (1 teaspoon), Taco Seasoning (2 teaspoon) and Salt (1/2 teaspoon), stir everything. Then add the cooked quinoa and stir.
At the end add Lime Juice (1 tablespoon) and a handful of Fresh Cilantro (1 handful) into the quinoa and combine everything. Your Mexican quinoa is ready to serve! Add some avocado on top if you want.
