Step 1
Into the bowl of a stand mixer fitted with a dough hook, add
Active Dry Yeast (1 pckg)
and
Milk (3/4 cup)
. Mix, then let stand for 10 minutes.
Step 2
Add
Eggs (4)
,
All-Purpose Flour (4 1/2 cups)
,
Granulated Sugar (1/4 cup)
, and
Kosher Salt (1/2 Tbsp)
. Mix until smooth dough forms.
Step 3
Add
Unsalted Butter (1/3 cup)
. Knead for about 7 minutes on low speed.
Step 4
Turn dough out onto a lightly floured surface and knead a few times with your hands. Place into an oiled bowl. Cover and let rise for 1 1/2-2 hours.
Step 5
Preheat oven to 400 degrees F (205 degrees C).
Step 6
Into a mixing bowl, add
Brown Sugar (2/3 cup)
and
Ground Cinnamon (1/2 Tbsp)
. Mix to combine.
Step 7
Punch the dough down to release any air. Split it into two even halves. Roll each piece out into a 9 by 14-inch rectangle.
Step 8
Spread dough with
Unsalted Butter (1/4 cup)
.
Step 9
Roll up the dough and pinch the ends to seal. Cut each log in half, then into fourths. You should have 16 rolls in total.
Step 10
Transfer rolls to greased 7 by 11-inch baking pans.
Step 11
Bake for 15-20 minutes, until starting to turn golden brown.
Step 12
Let cool, then cover in
Cream Cheese Frosting (to taste)
or frosting or glaze of choice.
