Cooking Instructions

step 1
Must have the water boiling before adding the eggs. Boil the Farmhouse Eggs® Large Brown Eggs (12) for 10 minutes.
step 2
Drain the water and let the eggs rest in the pot for 5 minutes. Transfer them to an ice bath for 10 minutes to cool. This is guaranteed for an easy peel.
step 3
Cut each peeled egg in half lengthwise and scoop out the yolks into a medium-sized mixing bowl.
step 4
Add the Jalapeño Pepper (1), Dill Pickles (3) spears, Dan-O’s® Cajun Seasoning (1 1/2 Tbsp), Cajun Injectable Butter (2 Tbsp), Yellow Mustard (1 1/2 Tbsp) and Hellmann's® Real Mayonnaise (2 Tbsp) to the bowl. Mash and mix all the ingredients together until well combined. Set aside.
step 5
Add All-Purpose Flour (1/2 cup) in the first bowl. In the second bowl, beat the Eggland's Best Classic Eggs (2) to create an egg wash. In the third bowl, mix the Panko Breadcrumbs (1 cup) with Dan-O’s® Cajun Seasoning (2 Tbsp).
step 6
Dredge each egg half in flour, shaking off the excess. Dip it in the egg wash to coat well. Coat with the panko mixture, pressing gently to adhere.
step 7
In a large pan, heat the Oil (5 cups) to 325 degrees F (160 degrees C). Cooking in small batches, carefully place the breaded egg halves in the pan with the rounded side facing down. Fry until the bottom is golden brown, then flip the egg halves and cook the other side until golden, about 1 minute per side.
step 8
Remove the fried eggs and place them on a paper towel-lined plate to drain excess oil.
step 9
Take the mashed yolk mixture and spoon it into the fried egg halves. Sprinkle Dan-O’s Cajun on top for garnish.
