Step 1
Saute
Onion (1)
and
Bell Pepper (1)
in a little oil until soft and turning brown. Set aside.
Step 2
Into a mixing bowl, add
Pink Salmon (1 can)
. Break it up with your fingers, removing any bones.
Step 3
Add
Egg (1)
and mix well.
Step 4
Add
Kosher Salt (1/2 tsp)
,
Ground Black Pepper (3/4 tsp)
,
Dried Oregano (1/2 tsp)
, and
Garlic Powder (1 tsp)
. Mix.
Step 5
Add veggies and
All-Purpose Flour (3/4 cup)
. Mix to combine.
Step 6
Form mixture into 9-12 patties and place on a baking tray lined with parchment paper.
Step 7
In a pan over medium-high heat, heat
Cooking Oil (3/4 cup)
. Place salmon patties in and cook until golden brown on both sides, about 3 minutes per side. You may need to do this in batches.
Step 8
Transfer salmon croquettes to a plate lined with coffee filters or paper towel to drain excess oil before serving. Serve warm.
