Step 1
Cover
Steak (4)
with a piece of plastic. Using the flat side of a mallet, pound meat out until thin. Using the meat tenderizer side of a mallet, pound both sides.
Step 2
Into one mixing bowl, add
Milk (1 cup)
and beaten
Eggs (2)
. Beat together.
Step 3
Into a second mixing bowl, add
All-Purpose Flour (1 1/2 cups)
,
Salt (1 tsp)
,
Onion Powder (1/2 Tbsp)
,
Paprika (1/2 Tbsp)
, and
Ground Black Pepper (3/4 tsp)
. Whisk to combine.
Step 4
Coat each steak in the dry ingredients, then place them onto a baking tray lined with a wire rack.
Step 5
Coat each steak in the wet ingredients, then dredge once more in the dry ingredients. Return to the baking tray.
Step 6
Add
Canola Oil (as needed)
to a pan. Once hot, add the steaks. Cook for 3-4 minutes on each side, or until golden brown. Remove to a wire rack to drain.
Step 7
Into a skillet over medium heat, add
Butter (1/3 cup)
. Once melted and bubbling, add sliced
Onion (1)
and
Baby Bella Mushrooms (1/2 cup)
. Cook for 1-2 minutes.
Step 8
Reduce heat to medium-low. Add
All-Purpose Flour (1/4 cup)
, half at a time, stirring constantly to incorporate.
Step 9
Add
Milk (1 1/2 cups)
and
Chicken Stock (1/2 cup)
. Bring to a boil, whisking frequently. Taste and add
Salt (to taste)
,
Ground Black Pepper (to taste)
, and
Crushed Red Pepper Flakes (to taste)
.
Step 10
Pour gravy over the chicken fried steak before serving.
