Step 1
Preheat oven to 350 degrees F (180 degrees C). Spray an 8 1/2-inch x 4 1/2-inch loaf pan with cooking spray. Combine the White Whole Wheat Flour (1 1/2 cups) , Granulated Sugar (1/4 cup) , Baking Soda (1 tsp) , and Salt (1 tsp) in a medium sized bowl. Set aside.
Step 2
Place the Eggs (2) , Coconut Oil (1/4 cup) , Low Fat Vanilla Yogurt (1/2 cup) , Bananas (2) , and Vanilla Extract (1/2 tsp) into blender, and secure lid.
Step 3
For the Blendtec, press the batters button. Pour batter into dry ingredients, and use a spatula to gently mix until just combined. Add Chopped Pecans (3/4 cup) and pulse 1 to 3 times until combined.
Step 4
For the Vitamix, start on speed 1, turn machine on slowly, and increase speed to 5. Blend for 10-15 seconds, or until mixed. Pour batter into dry ingredients, and mix gently by hand to combine. Stir the chopped pecans into batter.
Step 5
Pour into prepared loaf pan, and bake for 60 minutes, or until a knife inserted into the center comes out clean.
Step 6
Remove from oven, let cool, and serve. Enjoy!
