Preheat oven to 350 degrees F (180 degrees C). Spray an 8 1/2-inch x 4 1/2-inch loaf pan with cooking spray. Combine the White Whole Wheat Flour (1 1/2 cup), Granulated Sugar (1/4 cup), Baking Soda (1 teaspoon), and Salt (1 teaspoon) in a medium sized bowl. Set aside.
Place the Egg (2), Coconut Oil (1/4 cup), Low Fat Vanilla Yogurt (1/2 cup), Banana (2), and Vanilla Extract (1/2 teaspoon) into blender, and secure lid.
For the Blendtec, press the batters button. Pour batter into dry ingredients, and use a spatula to gently mix until just combined. Add Chopped Pecans (3/4 cup) and pulse 1 to 3 times until combined.
For the Vitamix, start on speed 1, turn machine on slowly, and increase speed to 5. Blend for 10-15 seconds, or until mixed. Pour batter into dry ingredients, and mix gently by hand to combine. Stir the chopped pecans into batter.
Pour into prepared loaf pan, and bake for 60 minutes, or until a knife inserted into the center comes out clean.
Remove from oven, let cool, and serve. Enjoy!
