Step 1
Heat the
Corn Oil (as needed)
over medium heat in two separate skillets.
Step 2
While the oil is heating up, peel the plantains. Cut the
Plantain (1)
into about 1-inch circles. Cut the
Plantain (1)
in thinner diagonal slices.
Step 3
Fry green plantain for about 1 minute on each side and set aside. At the same time, fry yellow plantain until each side is nice and golden. Set aside until serving.
Step 4
Take the green plantain circles and flatten them. You can smash them with the bottom of a plate, pan, or cup. Put the flattened plantains back in the oil and fry for another 2-3 minutes until nice and crunchy. Remove the plantains and drain them on paper towels.
Step 5
In a small bowl, mix
Corn Oil (1/4 cup)
,
Fresh Cilantro (1/2 tsp)
, and
Garlic (1/4 tsp)
. Serve with the plantains.
