Step 1
Into a pressure cooker, add Olive Oil (1 splash) and Pork Jowl Bacon (0.5 pound). Cook for 10 minutes.
Step 2
Add Red Onion (1) and Green Bell Pepper (1). Cook for 1 minute.
Step 3
Add Garlic (3 clove) and Water (5 cup). Stir.
Step 4
Add Paprika (2 tablespoon), Coarse Black Pepper (1 tablespoon), Kosher Salt (1 1/2 teaspoon), and Collard Greens (2 pound). Cover and cook on the soup setting for 45 minutes.
Step 5
Add Apple Cider Vinegar (1/4 cup), Granulated Sugar (6 tablespoon), and Crushed Red Pepper Flakes (1 1/2 teaspoon). Stir to combine.
Step 6
Set pressure cooker to saute function and cook for an additional 10 minutes.
Step 7
Serve.
