Cooking Instructions

Step 1
Into a pressure cooker, add Olive Oil (1 splash) and Pork Jowl Bacon (8 oz) . Cook for 10 minutes.
Step 2
Add Red Onion (1) and Green Bell Pepper (1) . Cook for 1 minute.
Step 3
Add Garlic (3 cloves) and Water (5 cups) . Stir.
Step 4
Add Paprika (2 Tbsp) , Coarse Black Pepper (1 Tbsp) , Kosher Salt (1/2 Tbsp) , and Collard Greens (25 cups) . Cover and cook on the soup setting for 45 minutes.
Step 5
Add Apple Cider Vinegar (1/4 cup) , Granulated Sugar (1/3 cup) , and Crushed Red Pepper Flakes (1/2 Tbsp) . Stir to combine.
Step 6
Set pressure cooker to saute function and cook for an additional 10 minutes.
Step 7
Serve.
