Refrigerate extra porridge for a quick grab n’ go breakfast throughout the week.

Place Quinoa (1 cup) in a colander and rinse well with cold water.

Put Vanilla Almond Milk (2 cups) in a large saucepan, add rinsed quinoa, and bring to a boil, stirring occasionally.

Reduce heat to simmer, cover, and cook, stirring, until all the almond milk is absorbed, about 10 to 15 minutes.

Stir in Dried Blueberries (1/3 cup), Walnut (1/3 cup), and Ground Cinnamon (1 dash) and let rest, covered, for 5 minutes.

To make a Frozen Blueberry Compote, place Fresh Blueberry (1/2 cup) in a microwave-safe dish and heat in a microwave oven on high for 45 seconds or until the berries release their juices.

Fluff quinoa with a fork and spoon into bowls, then spoon the compote over the top of the Quinoa Porridge. Enjoy!
