Start by shredding your Potato (1.5 pound) with a food processor and placing into a bowl. Using a cheese cloth or kitchen towel squeeze the water out and transfer to another bowl.
Add the Egg (1), Onion (1), Kosher Salt (1/2 teaspoon), Ground Black Pepper (1/2 teaspoon), Garlic Powder (1 1/2 teaspoon), Paprika (1 1/2 teaspoon) to the potatoes and mix thoroughly. Add some All-Purpose Flour (5 tablespoon) and mix.
Brush your waffle iron with some Cooking Oil (to taste). Place a couple of tablespoons of the batter, close and cook.
Repeat for the rest of your batter. Serve with toppings of your choice such as sour cream and parsley.
