Sweet Potato Toastie
Ground Black Pepper
Extra-Virgin Olive Oil
Sweet Potato (1)
lengthwise about 4 millimeters thick. Depending on the size of the potato, you may get 6 toasties.
Preheat oven to 350 degrees F (180 degrees C). Grease or place parchment paper on a baking sheet.
Place sweet potato toasties on a baking sheet. Season with
Sea Salt (1 pinch)
Ground Black Pepper (1 pinch)
. Give a little drizzle of
Extra-Virgin Olive Oil (1/2 tsp)
Bake for 30-35 minutes until they are fork-tender. You may wish to cook them longer to get them crusty or you could simply pop them in your toaster just before you dress them up. They will cook faster if they are cut thinner so check them at 25 minutes to make sure they don't burn.
Slather sweet potato toastie with
Goat Cheese (1/4 cup)
. Layer with
Cucumbers (8 slices)
Fresh Strawberries (4)
. Top with
Dried Basil (to taste)
. Season with ground black pepper.
