Preheat Panini maker to "Grill" on "High."
Drain Canned Albacore Tuna (3 ounce) liquid from can and add the tuna to the mixing bowl. Add Low-Fat Mayonnaise (1 tablespoon), Garlic Powder (1/4 teaspoon), and Salt (1/4 teaspoon).
Drain and chop Capers (1/2 teaspoon), along with the Celery (1/4 cup) and Fresh Chives (1/2 tablespoon). Add them to the bowl along with the chopped Italian Flat-Leaf Parsley (1/2 tablespoon).
Add Smoked Paprika (1/4 teaspoon), juice of the Lemon (1/4) and Ground Black Pepper (to taste). Mix well and set aside.
Lightly warm and toast Bread (4 slice) for a few minutes then remove from Panini maker. Add Sharp Cheddar Cheese (2) to cover one side of the bread.
Lower Panini maker to Medium-High or Medium. Put one slice of bread back on Panini maker, place sliced cheese on bread, followed by tuna mixture, and finally by the last piece of bread.
Close Panini maker and check on sandwich after 5 minutes to see if cheese is melted and sandwich is hot. Enjoy!
