Preheat oven to 375 degrees F (190 degrees C).
Spray a shallow baking dish with Canola Oil Spray (to taste).
Core Apple (2) halfway and make a wide opening or pocket into the apple. Remove all the seeds.
Melt Unsalted Unsalted Butter (1 tablespoon) in microwave for 30-40 seconds. Mix the melted butter in a small cup or bowl with the Ground Cinnamon (1/2 teaspoon), Brown Sugar (4 tablespoon) and the zest of the Lemon (1).
Put the melted butter mixture into the apples.
Bake for 15 to 20 minutes depending on the size of the apple but check after 13 to 14 minutes.
Tastes great with vanilla frozen yogurt, ice cream, and whipped cream. Finely chop leftover apples and add to granola, parfait, vanilla yogurt or oatmeal. Enjoy!
