Author's Notes

To make croutons: cut stale bread into small cubes. Liberally toss with oil and toast in a large saute pan over medium/high heat until golden brown.

Cooking Instructions

Step 1
Heat Olive Oil (1 Tbsp) in a medium pot over medium-high heat. Add Sweet Onions (1/2 cup) and Garlic (4 cloves) , cooking until onion softens and is fragrant.
Step 2
Stir in Tomatoes (7 cups) and continue cooking, uncovered, until tomatoes have mostly broken down, about 10 minutes.
