Cooking InstructionsHide images
step 1
Preheat oven to 400 degrees F (200 degrees C).
step 2
Melt the Dark Chocolate (1/2 cup) and Heavy Cream (2 Tbsp) together in a microwave oven, stirring every 20 seconds until combined fully. Set aside for now.
step 3
In a large mixing bowl, beat together the Eggs (2) and Caster Sugar (1/2 cup) followed by the Milk (3/4 cup).
step 4
Add the Pancake Mix (3 cups) and Unsalted Butter (3 Tbsp). Once combined, add the Bananas (2) and blend.
step 5
Fill the cupcake liners with batter until they are 1/2 full.
step 6
Add spoonfuls of Bananas (2) and drizzle the melted chocolate over the cupcakes.
step 7
Add more batter until the liners are 3/4 full. Then, give it a slight swirl using a spoon or chopstick.
step 8
Bake the cupcakes for 5 minutes.
step 9
Lower the heat to 350 degrees F (180 degrees C) and bake for another 10 minutes. They should bake to form a nice dome shape. Let them cool before decorating.
step 10
Cream the Butter (1/3 cup) using an electric mixer, adding the Powdered Confectioners Sugar (1 Tbsp), Raw Cocoa Powder (2 1/2 Tbsp), and Milk (1 Tbsp) one at a time. Beat until it is light and fluffy.
step 11
Add the Banana (1) a spoonful at a time and continue to mix.
step 12
Pour in the Dark Chocolate (3 1/2 Tbsp) and mix until it is well combined.
step 13
Make small incisions on the top of the cupcakes to insert the Mini Chocolate Cookies (to taste) or Chocolate Biscuits (to taste) that will be the animal ears. To make the bear cupcakes, make the incisions further apart. For rabbit cupcakes, they will look cuter with the ears closer together.
step 14
Coat the ears with chocolate banana buttercream, and insert them into the cupcakes. Cover the cupcake with the chocolate banana buttercream as well.
step 15
Using the Dark Chocolate (to taste), pipe on the eyes, snout, and whiskers for the rabbits. Mix White Chocolate (to taste) and Pink Food Coloring (to taste) to draw on "blush."
step 16
Enjoy these cute cupcakes!
