Author's Notes

Cuban Mojo is traditionally made with sour oranges which can be difficult to find. Combining fresh orange and lime juices gives you a close approximation - and tastes fantastic.

Make the Mojo by mixing: Extra-Virgin Olive Oil (1/3 cup), Fresh Oregano (2 Tbsp), the juice and zest of Limes (2) and Orange (1). Add in Garlic (8 cloves) and Ground Cumin (1 tsp).
