Author's Notes

Cuban Mojo is traditionally made with sour oranges which can be difficult to find. Combining fresh orange and lime juices gives you a close approximation - and tastes fantastico.

Cooking Instructions

Step 1
Make the Mojo by mixing: Extra-Virgin Olive Oil (1/3 cup), Fresh Oregano (2 tablespoon), the juice and zest of Lime (2) and Orange (1). Add in Garlic (8 clove) and Ground Cumin (1 teaspoon).
Step 2
Marinate the Center-Cut Pork Chop (4) (pork chops should be about 1-inch thick) in the mojo for at least an hour or two and up to overnight.
Step 3
Prepare a grill for direct heat cooking. Grill the thick center cut pork chops over a high flame until done to your liking. About 6 minutes per side for medium, 8 to 9 minutes per side for well.
Step 4
Allow to rest for a couple of minutes and enjoy!
