Grilled Pork Chops with Garlic Lime Mojo

Inch thick, center cut, bone in, pork chops marinated in orange, lime, oregano and garlic, garlic and more garlic then char grilled to porky perfection. Marinate the pork for an hour or two before hand, or even overnight.

Extra-Virgin Olive Oil

Fresh Oregano , chopped

Cooking Instructions

Make the Mojo by mixing: Extra-Virgin Olive Oil (1/3 cup) , Fresh Oregano (2 Tbsp) , the juice and zest of Limes (2) and Orange (1) . Add in Garlic (8 cloves) and Ground Cumin (1 tsp) .

Marinate the Center-Cut Pork Chops (4) (pork chops should be about 1-inch thick) in the mojo for at least an hour or two and up to overnight.

Prepare a grill for direct heat cooking. Grill the thick center cut pork chops over a high flame until done to your liking. About 6 minutes per side for medium, 8 to 9 minutes per side for well.

Allow to rest for a couple of minutes and enjoy!

Author's Notes

Cuban Mojo is traditionally made with sour oranges which can be difficult to find. Combining fresh orange and lime juices gives you a close approximation - and tastes fantastic.
