Preheat oven to 400 degrees F (200 degrees C). Lightly grease a sheet pan with oil and set aside.
In a bowl, mix Ground Turkey (1 pound), Egg (1), Breadcrumbs (1/2 cup), Fresh Parsley (1/4 cup), Garlic (1 clove), Shallot (1/4 cup), Tomato Paste (1 tablespoon), Salt (1 teaspoon) and Ground Black Pepper (1 teaspoon) together thoroughly with your hands.
Roll into about 20 meatballs and place on pan.
Bake until golden brown, about 20 minutes or until cooked through and not pink in the middle.
