Remove the feet from the stock, and cut the meat into bite-size pieces. There should be about 2-quarts of stock at this point.

Add White Rice (to taste) to the stock and cook until the porridge has the preferred texture. The amount of rice and the cooking time depends on your preference, however, cooking 1 cup of rice for about an hour in the stock will yield a pretty standard consistency.

In the meantime, slice and fry Onions (4) in Neutral Oil (as needed) until crisp, then remove to an absorbent paper.
