Soak your Russet Potato (2) in cold water for 2 hours then cut them into fries.
Preheat your oven to 425 degrees F (218 degrees C).
In a large bowl drizzle the cut potatoes with Olive Oil (3 tablespoon) and season with Onion Powder (2 teaspoon), Garlic Powder (2 teaspoon), Salt (3/4 teaspoon) and Freshly Ground Black Pepper (1/2 teaspoon). Add in Fresh Parsley (2 tablespoon), Fresh Rosemary (2 teaspoon), and Fresh Dill (1/2 teaspoon) and combine.
Line a baking tray with parchment paper and spread out the fries. Place in the preheated oven to bake for 45 minutes to 1 hour. Flip the fries every 15 minutes until they are done.
Serve hot with dipping sauces of choice!
