Preheat oven to 400 degrees F (200 degrees C).
Wash and cut the Sweet Potato (1) and Carrot (6) into 1/2-inch wide batons.
In a large baking sheet, toss carrots and sweet potatoes with Olive Oil (2 tablespoon), Dried Mixed Herbs (2 tablespoon), Salt (1 teaspoon), and Ground Black Pepper (1/2 teaspoon).
Arrange in a single layer and make sure to flip the fries over two or three times to brown evenly. Bake for about 35-40 minutes, or until golden brown and crisp. Keep an eye on them making sure not to burn.
Serve with garlic aioli or your favorite condiment.
