Chop the Scallion (2).
Crack the Egg (3) in a bowl.
Melt Unsalted Butter (1 1/2 tablespoon) on low heat.
Add the eggs (3) and start to stir. Remove the pan from the stove for a minute and then put the pan back on the heat and stir, as this prevents overcooking. Repeat until egg has almost cooked through.
Add the scallions and turn off the heat. If using, add Crème Fraîche (1 tablespoon).
Add Salt (to taste) and Ground Black Pepper (to taste) as desired and serve.
