Step 1
Chop the
Scallions (1 bunch)

Crack the
Eggs (3)
in a bowl.
Step 3
Melt
Unsalted Butter (1 1/2 Tbsp)
on low heat.
Step 4
Add the eggs (3) and start to stir. Remove the pan from the stove for a minute and then put the pan back on the heat and stir, as this prevents overcooking. Repeat until egg has almost cooked through.
Step 5
Add the scallions and turn off the heat. If using, add
Crème Fraîche (1 Tbsp)
.
Step 6
Add
Salt (to taste)
and
Ground Black Pepper (to taste)
as desired and serve.
