In a bowl, mix together Kosher Salt (1 Tbsp), Cayenne Pepper (1 Tbsp), Paprika (2 1/2 Tbsp), Ground White Pepper (1 1/2 Tbsp), Granulated Garlic (2 Tbsp), Granulated Onion (1 Tbsp), Dried Oregano (1 Tbsp), Ground Thyme (1/2 Tbsp), and Ground Black Pepper (1/2 Tbsp).

In a bowl, mix together Mayonnaise (1 cup), Creole Mustard (1 Tbsp), 2 Tbsp juice from Lemons (2), prepared cajun seasoning (1 teaspoon), Garlic (2 cloves), Hot Sauce (1 tsp), and Scallion (1 bunch)

Put plastic wrap over the bowl and place the aioli in the refrigerator until required.

Shell and devine the Shrimp (6 lb).

Prepare the marinade by mixing together Olive Oil (1 cup), prepared cajun seasoning (1/2 teaspoon), 1/4 cup Lemon Juice, and Honey (1/2 cup) and mix everything well.

Dump the shrimp in the marinade and mix it through. Let it sit it in the refrigerator for half an hour or longer.

Fire up the grill to 450 degrees F (230 degrees C).

Using two sticks, skewer the shrimp leaving a little gap in between each shrimp. This lets it cook evenly.

Season the shrimp with the cajun seasoning. Place the shrimp on the grill dome and let them grill for about 3 minutes.

Flip and grill them on both sides. Set the shrimps on the side.

Grill the French Bread (12) spread the aioli on the bread.

Layer with shredded Lettuce (10 cups) and sliced Tomatoes (4).

Top with the grilled shrimp. Put the other half of the bread on top.

Press it down, slice and serve the po boys. Enjoy!
