Nothing says summer like peaches. Drop a nice batter over sliced peaches and you have yourself a cobbler. I adore the idea of a recipe handed down through the generations. This is one such recipe. Handed down to cookbook author, Katie Lee (of The Kitchen), from her grandmother.

Peaches
, peeled, sliced

All-Purpose Flour

Granulated Sugar
•

Baking Powder
•

Milk

Butter
, melted

Corn Starch
•

Water
, boiled
•
to taste
Vanilla Ice Cream
or Whipped Cream
(optional)
Cooking Instructions
1.
Preheat oven to 325 degrees F (160 degrees C).
2.
Peel and slice the Peaches (4). Place peaches in an 8×8 dish.
3.
Mix All-Purpose Flour (1 cup), Granulated Sugar (3/4 cup), Baking Powder (1 tsp) and Salt (as needed).
4.
Add Milk (1/2 cup) and Butter (4 Tbsp) to flour mixture and stir until combined.
5.
Place batter over peaches.
6.
Mix remaining Granulated Sugar (4 Tbsp), Corn Starch (1 Tbsp) and remaining Salt (as needed). Sprinkle evenly over batter.
7.
Evenly pour the Water (1/2 cup) all over.
8.
Bake for 50 to 60 minutes.
9.
Let cool slightly to let the juices redistribute. Serve with Vanilla Ice Cream (to taste).
