Heat skillet then add Olive Oil (1 tablespoon). When oil is hot, add Onion (1), Mixed Vegetables (1 cup), and Salt and Pepper (to taste). Cook for about 3 minutes over medium-low heat, stirring occasionally.
Add Garlic (2 clove), Tomato (1 cup), Canned Chickpeas (1 cup), and Chard (2 cup).
Cook for 10 to 15 minutes, stirring occasionally. Taste and adjust seasoning if desired. Turn the heat down to low and make a small well for each egg.
Add the Egg (2), one per well. Season with Salt and Pepper (to taste). Cook covered until eggs are done for about 3 to 6 minutes, depending on how runny you like the yolk.
Serve topped with chopped Fresh Basil (to taste) and a squeeze of Lemon (to taste). Enjoy!
