Peel the Granny Smith Apple (2.5 pound) and thinly slice them.
Preheat oven to 350 degrees F (180 degrees C). In a large bowl, toss the apples with Lemon Juice (2 tablespoon) and Granulated Sugar (1/2 cup)
In a large skillet, melt 1/4 of the stick of Butter (2 tablespoon) Add the apple mixture and cook over moderate heat stirring occasionally until softening but not brown.
Scrape the apples into a large baking dish. Wipe out the apple bowl and add the remaining ingredients plus the rest of the Butter (8 tablespoon). With your hands, break up the butter into the All-Purpose Flour (1 1/2 cup), Old Fashioned Rolled Oats (3/4 cup), Brown Sugar (1 1/2 cup), Ground Cinnamon (1 tablespoon), Salt (1/2 tablespoon) and Ground Cardamom (1/2 tablespoon) until it resembles coarse crumbs. This is your topping.
Scatter this over the apples and pat down.
Bake the crisp for 40 to 50 minutes until the apples are bubbling and the topping is golden brown.
Let cool and serve with Crème Fraîche (to taste) or vanilla ice cream. Enjoy!
