Preheat oven to 350 degrees F (180 degrees C). In a large bowl, toss the apples with the juice from Lemon (1) and Granulated Sugar (1/2 cup).

In a large skillet, melt 1/4 of the stick of Butter (2 Tbsp) Add the apple mixture and cook over moderate heat stirring occasionally until softening but not brown.

Scrape the apples into a large baking dish. Wipe out the apple bowl and add the remaining ingredients plus the rest of the Butter (1/2 cup). With your hands, break up the butter into the All-Purpose Flour (1 1/2 cups), Old Fashioned Rolled Oats (3/4 cup), Brown Sugar (1 1/2 cups), Ground Cinnamon (1 Tbsp), Salt (1/2 Tbsp) and Ground Cardamom (1/2 Tbsp) until it resembles coarse crumbs. This is your topping.
