Step 1
Whisk your
Eggs (2)
and leave aside. To spice our
Unflavored Protein Powder (1 1/2 cups)
, add in
Paprika (1/2 tsp)
,
Garlic Powder (1/2 tsp)
,
Ground Black Pepper (1/4 tsp)
and
Salt (1/2 tsp)
. Mix everything together until well combined.
Step 2
Dunk the
Boneless, Skinless Chicken Thighs (1 lb)
into the beaten eggs, then place into the seasoned protein powder. Get everything coated really well, placing finished pieces on a plate. Try to work quickly on this step - the longer you leave the chicken the more the powder will absorb into it. It really works best if you coat and fry as you go otherwise it can get patchy.
Step 3
Shallow frying them in hot
Coconut Oil (1/2 cup)
(in batches so you don't overcrowd the pan) for 7-8 minutes, turning frequently until cooked through and golden brown.
Step 4
While the chicken is frying make the chili mayonnaise for dipping - this is optional but it goes great with it. Into a small bowl add
Mayonnaise (1 cup)
, along with
Crushed Red Pepper Flakes (1 Tbsp)
and
Cayenne Pepper (1 tsp)
. Mix it together well and you’ve got a dipping sauce that really delivers a decent kick to the tastebuds.
Step 5
When the chicken is finished serve immediately, its a great low carb protein on protein snack that so sharable with friends and when you bite into the chicken you can see how tender and juicy the crunchy coating is.
