Preheat oven to 350 degrees F (180 degrees C).
Peel the Persimmon (2) carefully and add them to a blender and puree.
Dissolve the Baking Soda (1 teaspoon) in the persimmon and set aside.
Sift All-Purpose Flour (2 cup), Ground Cinnamon (1/2 teaspoon), Ground Cloves (1/2 teaspoon), Ground Nutmeg (1/2 teaspoon) and Salt (1/2 teaspoon) together and set aside.
Cream together Butter (1/2 cup) and Granulated Sugar (1 cup) until fluffy.
Add in the persimmon mixture.
Stir in dry ingredients slowly, making sure they are combined well.
Stir in Pecans (1 cup).
Line cookie sheet with parchment paper. Drop mixture by the spoonful on the cookie sheet. Bake for 15 minutes.
