Author's Notes

The recipe for the pickling liquid on this page is only a guideline, you can experiment with the length of marination, as well as the flavor of the marination, for example, omit the dashi, add garlic, increase or decrease the vinegar and sugar, etc, etc.

Cooking Instructions

Step 1
Wash the Tomato (8) and use a knife to cut an "X" on the bottom of each.
Step 2
Blanch the tomatoes in boiling water with a generous pinch of Kosher Salt (to taste) water for 30 seconds.
Step 3
Remove the tomatoes and place an Ice (to taste) bath to stop the cooking.
Step 4
Peel the tomatoes and place them in a non-reactive container.
Step 5
Prepare the pickling liquid for the tomatoes by mixing Dashi Moto Soup Stock Base (1 cup), Rice Vinegar (2 cup), Granulated Sugar (6 tablespoon), Soy Sauce (3 tablespoon) and a generous pinch of Kosher Salt (to taste).
Step 6
Cover the tomatoes with the pickling liquid. Seal, then pickle overnight. Store them in the marinade if desired, but the flavor will get stronger over time. Enjoy!
