Step 1
Wash the
Tomatoes (8)
and use a knife to cut an "X" on the bottom of each.
Step 2
Blanch the tomatoes in boiling water with a generous pinch of
Kosher Salt (to taste)
water for 30 seconds.
Step 3
Remove the tomatoes and place an
Ice (to taste)
bath to stop the cooking.
Step 4
Peel the tomatoes and place them in a non-reactive container.
Step 5
Prepare the pickling liquid for the tomatoes by mixing
Dashi Moto Soup Stock Base (1 cup)
,
Rice Vinegar (2 cups)
,
Granulated Sugar (1/3 cup)
,
Soy Sauce (3 Tbsp)
and a generous pinch of
Kosher Salt (to taste)
.
Step 6
Cover the tomatoes with the pickling liquid. Seal, then pickle overnight. Store them in the marinade if desired, but the flavor will get stronger over time. Enjoy!
