Preheat oven to 400 degrees F (200 degrees C).
Mix Unsalted Butter (8 tablespoon), Powdered Confectioners Sugar (1/4 cup) and Vanilla Extract (1/2 teaspoon) in a large bowl.
Stir in All-Purpose Flour (1 1/8 cup), Almonds (6 tablespoon), and Salt (1 pinch).
Shape dough into 1-inch balls. Place about an inch apart on a cookie sheet.
Bake 10 to 12 minutes or until set but not brown. Remove from cookie sheet and let cool slightly on a wire rack.
Roll warm cookies in Powdered Confectioners Sugar (to taste).
Set on wire rack to cool completely. Roll in powdered sugar again.
