Step 1
Heat the Olive Oil (1/2 Tbsp) in a pot and add the Onions (3/4 cup) and Garlic (2 cloves) . Sauté until the onions are cooked.
Step 2
Add the Tomatoes (3/4 cup) , Water (3 cups) , Salt (to taste) and Ground Black Pepper (to taste) . Bring to a boil.
Step 3
Add the Orzo Pasta (1/2 cup) and cook for 3 minutes.
Step 4
Then add Broccoli (3 cups) and the Carrots (1/4 cup) and cook until the pasta is done (follow package instructions).
Step 5
Garnish with spring onions if needed.
