Coarsely mash the Red Kidney Beans (1 1/2 cup) and set aside.
Heat Olive Oil (1 teaspoon). Add Cumin Seeds (1 teaspoon) and Garlic (2 clove) and sauté for a few seconds.
Add the Onion (1/4 cup) and sauté until beginning to brown.
Add the beans, Salt (to taste), and Chili Powder (1/4 teaspoon). Mix and simmer for 5 minutes.
Heat a griddle and place a Tortilla (4) on it. Spread the bean mixture on one half of it and sprinkle with Cheese (1 cup).
Fold the tortillas in a semi-circle and allow it to brown on both sides.
Remove from heat and allow to rest for a few minutes. Slice and serve.
