Preheat the oven to 400 degrees F (200 degrees C).

Chop the Cauliflower (1 head) into small pieces.

In a medium-sized baking pan, arrange the cauliflower pieces and the Garlic (2 cloves).

Pour the Butter (1 Tbsp) over the cauliflower.

Sprinkle the cauliflower with Cayenne Pepper (as needed), Smoked Paprika (1 tsp), Salt (to taste) and Ground Black Pepper (to taste). Coat the cauliflower with the spices using your hands.

Bake for 45 minutes to an hour, depending on how crispy you like the florets. Squeeze the roasted garlic throughout and trash the skins.

Warm the Tortillas (6) in a microwave oven for 20 to 30 seconds, or put them in a warm oven covered with a towel while you prepare everything else.

Place two to three tortillas on each plate and fill with a generous serving of cauliflower. Sprinkle the Cheese (1 cup) over top and drizzle with Salsa (1/2 cup). Enjoy!
