In a large mixing bowl, whisk together juice of the Lime (1), Olive Oil (3 tablespoon) and Salt (1 pinch).
Add Cucumber (1), Watermelon (3 cup), Red Onion (1/4 cup), Avocado (1), Vegan Feta Cheese (1/4 cup), and Fresh Mint Leaves (1/4 cup).
Gently, toss using a folding motion to combine the fruit and vegetables with dressing. Taste and salt as needed. Garnish with additional mint and vegan cheese.
