Step 1
Give a small dice to the
Yellow Onion (1)

Carrot (1)
and
Celery (6 stalks)
. Peel and zest the
Oranges (2)
and give a small dice to it. Mince the
Garlic (1 clove)

Pulse the
Canned Whole Peeled Tomatoes (6 2/3 cups)
in a food processor or blender.
Step 3
Sear the
Italian Sausages (8 oz)
in a large stock pot over medium-high heat.

When 75 percent is cooked, add the onions, carrot, celery and garlic and sweat for 8 minutes.
Step 5
Deglaze with
Red Wine (4 fl oz)
and reduce by 50 percent.
Step 6
Add the pulsed tomato and cook until the oil on top turns bright red, about 15 minutes.
Step 7
Stir in
Heavy Cream (6 fl oz)
, then season with
Salt (to taste)
and
Ground Black Pepper (to taste)
. Keep warm and prepare the pasta.
Step 8
Bring a large pot of salted water to a boil, and prepare the
Linguine (1 pckg)
according to the packages instructions.
