Give a small dice to the Yellow Onion (1), Carrot (1) and Celery (6 stalk). Peel and zest the Sunkist Orange (2) and give a small dice to it. Mince the Garlic (1 clove).
Pulse the Canned Whole Peeled Tomatoes (28 ounce) in a food processor or blender.
Sear the Italian Sausage (8 ounce) in a large stock pot over medium-high heat.
When 75 percent is cooked, add the onions, carrot, celery and garlic and sweat for 8 minutes.
Deglaze with Red Wine (4 fluid ounce) and reduce by 50 percent.
Add the pulsed tomato and cook until the oil on top turns bright red, about 15 minutes.
Stir in Heavy Cream (6 fluid ounce), then season with Salt and Pepper (to taste). Keep warm and prepare the pasta.
Bring a large pot of salted water to a boil, and prepare the Linguine (1 package) according to the packages instructions.
