Cooking Instructions

Prepare
Soba Noodles (4 cups)
according to package directions and set aside.

Thinly slice
Red Bell Pepper (1)

Roughly chop
Fresh Cilantro (1/4 cup)

Spiralize the
Carrots (2)
.
5.
Spiralize the
Cucumber (1)
.
6.
To make peanut sauce, run food processor and add
Fresh Ginger (1 1/2 in)
and
Garlic (1 clove)

Once garlic clove and ginger are finely minced, add the
Creamy Peanut Butter (1/2 cup)
,
Reduced Sodium Soy Sauce (2 Tbsp)
,
Lime Juice (1 Tbsp)
,
Brown Sugar (1 tsp)
, and
Crushed Red Pepper Flakes (1/2 tsp)

Slowly add the
Water (1/3 cup)
1 tablespoon at a time and blend until smooth.
9.
To assemble each jar, divide all the ingredients into 4 portions and in each jar, layer the ingredients as follows: Peanut Sauce.

Sprinkle on thinly sliced
Scallions (4)

Add in spiralized carrots and cucumbers.
13.
Add in red bell pepper and cilantro.
14.
Top with
Peanuts (1/2 cup)

Place jars in the fridge and consume within 5 days. Enjoy!
