Guinness® Stout Beer
Irish Cheddar Cheese
Preheat oven to 375 degrees F (190 degrees C). Line 8 1/2- x 4 1/2-inch loaf pan with parchment paper, or coat with butter.
In a mixing bowl, thoroughly whisk together the All-Purpose Flour (2 3/4 cups), Granulated Sugar (3 Tbsp), Baking Powder (1 Tbsp), and Salt (1 tsp).
Pour in the Guinness® Stout Beer (12 fl oz) and mix until the dry ingredients are evenly moistened.
Fold in the grated Irish Cheddar Cheese (3/4 cup) and Fresh Chives (1/4 cup).
Transfer the batter to prepared pan.
Pour the Irish Butter (1/4 cup) evenly over top of the dough.
Bake about 30 minutes then scatter the remaining 1/4 cup of Irish Cheddar Cheese (1/4 cup) over the top.
Return the loaf to the oven and bake 15 to 20 minutes longer or until a tester inserted near the center comes out clean.
Cool in the pan for 5 minutes.
Turn out and serve warm, sliced.
