Makes 3-5 small muffins, depending on size.

Preheat Oven to 400 degrees F (205 degrees C).

In a medium bowl combine Almond Flour (1 1/3 cups), Baking Powder (1 tsp) and Salt (1/2 tsp).

Add Eggs (3) and Coconut Oil (3 Tbsp) into the flour mixture and stir until all clumps have broken apart. Let the dough sit for 5 minutes.

Line a small baking sheet with parchment paper. Using a Tablespoon scoop dough into 3-5 mounds until they are even in size. Using your fingers, smooth out the top and form into circles. Bake in the oven for 10-12 minutes.

Allow to cool and serve with your choice of spreads.
