Step 1
Make Pumpkin Pie Spice Mix by mixing Ground Cinnamon (1 Tbsp) , Ground Nutmeg (1/2 tsp) , Ground Ginger (1/2 tsp) , Ground Allspice (1/4 tsp) , and Ground Cloves (1/4 tsp) together.
Step 2
Add 1 1/2 tsp of the pumpkin spice mix to a large mixing bowl and then add in the Gluten-Free All-Purpose Flour (1 1/2 cups) , Baking Powder (1 Tbsp) , Salt (1/2 tsp) , and Granulated Sugar (1 Tbsp) . Mix until combined.
Step 3
Add the Egg (1) , Canned Pumpkin Purée (3 Tbsp) , Butter (2 Tbsp) , and Milk (1 1/4 cups) . Mix until all ingredients are combined and a smooth batter forms
Step 4
Add a pat of butter to a skillet and melt over medium-high heat. Once the skillet is hot, spoon batter into the pan and cook for 4-5 minutes, or until bubbles form. Flip and cook for another 4-5 minutes, then remove and repeat with remaining batter.
Step 5
Sprinkle with Powdered Confectioners Sugar (to taste) before serving. You can also add maple syrup if desired!
