Make Pumpkin Pie Spice Mix by mixing Simply Organic Cinnamon, Ground (1 Tbsp), Ground Nutmeg (1/2 tsp), Ground Ginger (1/2 tsp), Ground Allspice (1/4 tsp), and Ground Cloves (1/4 tsp) together.

Add 1 1/2 tsp of the pumpkin spice mix to a large mixing bowl and then add in the Gluten-Free All-Purpose Flour (1 1/2 cups), Baking Powder (1 Tbsp), Salt (1/2 tsp), and Granulated Sugar (1 Tbsp). Mix until combined.

Add the Eggland's Best Classic Egg (1), Canned Pumpkin Purée (3 Tbsp), Butter (2 Tbsp), and Milk (1 1/4 cups). Mix until all ingredients are combined and a smooth batter forms

Add a pat of butter to a skillet and melt over medium-high heat. Once the skillet is hot, spoon batter into the pan and cook for 4-5 minutes, or until bubbles form. Flip and cook for another 4-5 minutes, then remove and repeat with remaining batter.

Sprinkle with Powdered Confectioners Sugar (to taste) before serving. You can also add maple syrup if desired!
