To make the filling, combine Ricotta Cheese (1 cup), Mozzarella Cheese (1 cup), Feta Cheese (3/4 cup), Egg (1), Dried Oregano (1 tsp), Dried Mint (1 tsp) and Ground Black Pepper (to taste).

Place the Phyllo Dough (1) with the long side horizontal and shorter side vertical and slice into 4 equal strips. Cover with a damp tea towel so the pastry does not dry out.
