This is a great combination of crunchy, toasted bread and fried egg, crisp, salty bacon, refreshing tomatoes and creamy avocado. Yum! This really is a winner and doesn’t take too long to make either, which I consider pretty important for a breakfast meal.

Cooking Instructions
1.
Heat oil in a medium sauté pan, fry the Bacon (8 slices) till crispy. Drain on paper towel and set aside for later use.
2.
Cut out a hole from the center of each Bread (4 slices). You can use a biscuit cutter or simply scissors and knife.
3.
Heat half of the Unsalted Butter (2 Tbsp) in a nonstick skillet on medium-high heat. When the butter is no longer foaming, place bread slices in the skillet. If the skillet is small, you can do one or two at a time.
4.
Crack one Eggland's Best Classic Eggs (4) into the center of each slice of bread. Season with Salt (to taste) and Ground Black Pepper (to taste).
5.
Cook for about 3 minutes, then flip the sandwich over and cook to your liking of the eggs.
6.
Cut the Tomatoes (2) into slices.
7.
Slice the Avocados (2) in half. Use a spoon to take out the core, then scoop out the flesh of the avocado.
8.
Slice the avocados as thick or thin as you like.
9.
Place 2 slices of bacons on each sandwich.
10.
Top with 2 slices of tomatoes and avocados.
11.
Season with salt, pepper and Fresh Herbs (to taste) and serve.
