In a small skillet, heat the Olive Oil (1 Tbsp) over medium heat. Add the Shallots (2) and sweat them until soft and translucent. Transfer the shallots to a large bowl.

Add shallots to a bowl with Ground Turkey (1.3 lb), Fresh Cilantro (1/2 cup), Sriracha (1/4 cup), Kosher Salt (1/2 tsp), and Ground Black Pepper (1/2 tsp).

Combine the ingredients well with hands. Form the burgers into 4 equal patties and transfer to a sheet pan. Refrigerate the patties for 15 minutes to firm up.

Preheat the grill to 450 degrees F (230 degrees C). When grill is hot add the burgers and cook about 5 minutes per side. During the last minute of cooking, place a American Cheese Slices (4) each burger and cook until it's just melted.

To make the sauce, combine the Mayonnaise (1/2 cup), Sriracha (2 Tbsp), Fresh Cilantro (2 Tbsp), Lime (1), and Sriracha (1 tsp).
