Step 1
Preheat oven to 375 degrees F (190 degrees C).
Step 2
Cream the Olive Oil (1/2 cup) , Granulated Sugar (1/3 cup) , Brown Sugar (1/3 cup) , Vanilla Extract (1/2 Tbsp) , and Egg (1) together in a medium bowl. Add the Almond Flour (1/2 cup) , All-Purpose Flour (3/4 cup) , Salt (1/2 tsp) , and Baking Soda (1/4 tsp) . Mix until thoroughly combined. Fold in the Mini Chocolate Chips (1 cup) .
Step 3
Scoop the cookie dough out with a cookie scoop and place on a lined baking sheet two inches apart from one another.
Step 4
Bake in the oven for 10-12 minutes, or until the center of the cookie is no longer shiny and has domed.
Step 5
Let cool at least 20 minutes before eating.
