Preheat oven to 375 degrees F (190 degrees C).
Olive Oil (1/2 cup)
Granulated Sugar (1/3 cup)
Brown Sugar (1/3 cup)
Vanilla Extract (1/2 Tbsp)
together in a medium bowl. Add the
Almond Flour (1/2 cup)
All-Purpose Flour (3/4 cup)
Salt (1/2 tsp)
Baking Soda (1/4 tsp)
. Mix until thoroughly combined. Fold in the
Mini Chocolate Chips (1 cup)
Scoop the cookie dough out with a cookie scoop and place on a lined baking sheet two inches apart from one another.
Bake in the oven for 10-12 minutes, or until the center of the cookie is no longer shiny and has domed.
Let cool at least 20 minutes before eating.
