Preheat the oven to 350 degrees F (175 degrees C).
Cream the Vegetable Shortening (1 cup), Brown Sugar (1 cup), and Granulated Sugar (1 cup). Add in the Egg (2) and mix until combined.
Sift the Oatmeal (2 cup), All-Purpose Flour (2 cup), Salt (1/4 teaspoon), Baking Powder (1 teaspoon), and Baking Soda (1 teaspoon) together and add to the wet mixture. Fold in the Gumdrop (1 1/2 cup).
Roll out cookies by hand using a large cookie scoop to measure. Place at least 2-3 inches apart on a lined cookie sheet.
Bake for 12-14 minutes in the preheated oven. Serve after cooled.
