Preheat oven to 300 degrees F (150 degrees C).

Place the Unsweetened Coconut Flakes (2 1/4 cups) in a container and sprinkle the Stevia (1 1/2 Tbsp). Mix, then set aside.

Whisk the whites of the Eggs (2) until frothy, then add the stevia and coconut mixture. Mix until the flakes are coated.

Spread the flakes on a baking tray lined with baking paper. Bake for 20 to 30 minutes. Remove every 5 minutes to stir to ensure that they're evenly browned and crispy in the end.

Once done, leave the oven off and leave the oven door open slightly. Let the flakes dry out for 20 minutes.

Remove from the oven and leave to cool completely. These flakes must be kept in an air tight container and they’ll keep for up to 2 weeks. Serve with your desired milk.
